Spicy Quinoa Baked Chicken

Looking for a different chicken recipe?  Tired of chicken, maybe? Want a crust that isn’t bread and adds more protein? I made this just the other night and was pleased with the results.  For even more flavor, add different cheeses.  One of my favorite shredded cheese mixtures is by Frigo ; it has 3 cheeses, including Romano, which gives it more of a kick.  I used chicken tenders rather than chicken breasts and baked them in a Creuset baker.  Happy eating.  Husband tested and approved.

Crockpot Turkey With Kale, Butternut Squash, Cranberries and Rice

I am in Phoenix to visit my daughter Emily, son-in-law Clark and grandson Michael.  And to get a break from the Iowa winter.  All of my daughters possess exceptional cooking skills, and nothing makes ME happier than not having to cook.

I arrived in Phoenix yesterday morning, we gloried in the Arizona afternoon sun while Michael played, and managed to make a Target run all in one day.  So….Emily threw dinner in the crockpot.  All I can say is WOW.

This recipe blends exceptional tastes together and manages to be exceptionally healthy at the same time.  If you want to add to the healthy factor, replace the Uncle Ben’s Wild Rice with regular brown rice or quinoa or a mixture of both.  If you think you don’t like kale?  Well, trust me, you’ll like it in this.   Click on the link above to enjoy this delicious recipe.
